Burnt Timber to Take Guests on BBQ Road Trip

On Friday, February 18, Burnt Timber Brewing & Tavern will embark on a BBQ Road Trip, a culinary journey that each week will feature BBQ with flavors inspired from a different region of the United States. The first stop is in Texas. “We are going to do a huge brisket sandwich on Texas toast with fresh smoked slabs of brisket, a dark and sticky house bbq sauce, vinegar slaw and maple pickled jalapeños,” explained Chef Oliver Harston. 

The Texas BBQ Brisket Sandwich will be paired with Texas Sunrise, a cocktail that Bartender Sandra Bullis said mixes “Texas vibes and flavors.” “It’s a perfect complement to the sandwich in what we refer to as ‘the sweeten’ed Texan way,’” she added.

Other stops on the BBQ Road Trip include Carolina, Memphis, Alabama, Kansas, and Alaska with each week also featuring a specially made cocktail that complements the special. Examples of upcoming specials include a Carolina Pulled Pork Sandwich with a mustard and vinegar-based sauce. “The pork will be smoked 8-plus hours over more traditional smoking wood to achieve an authentic flavor,” said Harston.

As a complement to the Carolina Pulled Pork Sandwich, Burnt Timber will serve a peach-infused martini and fresh lime peach margarita. “We will make these in-house to complement the tart and sweetness of our BBQ in this leg of the journey,” added Bullis.

The BBQ Road Trip will conclude with a special 4-course dinner at Pavilion in Wolfeboro on Wednesday, March 30. Pavilion is located at Pickering House Inn, which was recently named as the best resort in New England by Travel + Leisure magazine. Tickets will go on sale the week of February 14 at pavilionwolfeboro.com.

“Take a trip with us,” said Owner Eddie Michno, who noted that planning for this themed BBQ road trip has taken months of planning. “We wanted to come up with a concept that elevates our brand of ‘ferment, salt, and smoke’ while keeping it fun at the same time.”
