For Eddie Michno, who owns Burnt Timber Brewing & Tavern in Wolfeboro, making “funky, unique farmhouse beer” is just one ingredient in his evolving recipe for success. “Our food is what really surprises people,” he said.
Michno’s cooking philosophy revolves around smoking, salt and fermentation, which he described as “slow, time-honored processes.” “They are definitely not a shortcut,” he explained. “When you allow your ingredients to transform with time, the ends justify the means.”
He cited their Kimchi as one example of their unique outlook on food, which often features ingredients locally grown or sourced. A staple in Korean cuisine, Kimchi is a traditional side dish of salted and fermented vegetables. “We make many kinds, but our Kimchi fermented with gin and sea salt in a barrel is a customer favorite,” said Michno, who noted Burnt Timber Brewing & Tavern accommodates people of all ages.
“We are family friendly, too,” he added. “This is a place for locals and tourists alike.”
Aside from the food and ambiance, Burnt Timber Brewing & Tavern is, of course, known for its beers, which range from the eclectic, Strawberry-Rhubarb Mead, to the adventurous with its recent one-off Busty Farmhouse Blonde. “It featured smoked peaches and apricots, and it was fermented in a maple bourbon barrel with brettanomyces, a non-spore forming yeast,” said Michno. “It was incredible…We like to take our customers through a wide range of flavors and textures.”
