Burnt Timber Brewing & Tavern is launching an experimental brewing project using parti‑gyle, a centuries‑old technique that creates multiple beers of different strengths from a single mash. “In essence, parti‑gyle lets us tell more than one story with the same grain,” said Owner/Brewer Eddie Michno. “We draw off the first runnings to make a bold, higher‑strength beer, with later runnings becoming a lighter, more crushable ‘table beer.’ It’s efficient, creative, and a really fun way for guests to taste how the process shapes flavor.”
Though often associated with England’s brewing traditions, parti‑gyle has roots across Europe, including Belgian monasteries that historically produced sets of beers—like Tripel, Dubbel, and Single—using variations from one mash. “We love connecting those old‑world ideas to what we’re doing here in Wolfeboro,” added Michno. “In one visit, you might enjoy a rich, strong ale and then a crisp table beer made from the same grain bill.”
Tax policy helped shape the rise and fall of parti‑gyle over time. Historically, taxes on mash tuns and raw grain pushed brewers to maximize yield from smaller vessels, leading to the creation of multiple-strength beers through parti-gyle brewing. “Brewing has always been about adapting,” said Michno. “Parti‑gyle is a perfect example of how tradition, economics, and ingenuity intersect.”
Beginning in August, guests can expect taproom‑only small batches, with additional releases rolling out through the fall. The bar team will pour side‑by‑side tastings and flights so visitors can compare how each “gyle” expresses the same base recipe. Styles will rotate over the season, ranging from English‑inspired strong ales paired with sessionable small beers to occasional Belgian‑leaning sets. While the project is underway, the taproom will feature brew‑day notes and gyle details for those who want a deeper look at the process. “We’re brewing these in small batches—when they’re gone, they’re gone—that’s the fun of it,” added Michno. “Come taste the history.”
